Quinoa cakesThese make a wonderful healthy breakfast or anytime snack. These have no flour and no butter, but plenty of taste and texture. The flavor is a mild sweetness that pairs great with maple syrup, fresh fruit, or a touch of Trader Joe’s coco almond butter (I am obsessed with this stuff) and the texture is like a pancake corncake hybrid.

I like to double or triple the recipe if I have a little more time because these do freeze and reheat really well, so you can make a big batch on Sunday and have leftovers for breakfast during the week. To reheat you just use the defrost setting on your toaster followed by the regular setting.

The good sister and aunt that I made these for my sister and nephews last Christmas when staying at their house, and I am happy to report these were kid friendly. I love making these because they taste like a treat on top of being a nutrition powerhouse. Feel free to make them guilt free for yourself and your loved ones!

Servings: 4 servings, this recipe can easily be doubled or tripled etc.

Lentil Tacos

These delicious lentil tacos are only 250 calories for a serving of two tacos, filled with 13g of protein and 9g of fiber. Oh, and did I say delicious? Becasue they are!

Oh lentil tacos, I LOVE lentil tacos.

A few years ago my sister found a recipe on a running blog (my oldest sister Keri is a dedicated marathoner, on top of chasing around my 3 adorable nieces) and she cooked me some delicious lentil tacos. After that I began cooking them pretty regularly myself.

I have adapted the recipe a bit over the years, often based on what I have in the house, and it’s a very forgiving dish that’s fun to experiment with. I use split red lentils from Trader Joe’s since they cook quickly, and the red lentils look similar to meat when they are done.

This is a great “Meatless Monday” recipe. However, I will note that I usually cook my “Meatless Monday” meals on Friday’s. It makes so much more sense to me since I do all of my grocery shopping on Sunday. I cook and eat my fresh meat, chicken, fish etc. early in the week and make my meatless dishes on Friday since those items usually have a long shelf life. To bad “Meatless Friday” doesn’t have the same ring to it. Okay now, without any further rambling from me, here is my favorite adaptation of this wonderful lentil taco recipe.
