Quinoa cakesThese make a wonderful healthy breakfast or anytime snack. These have no flour and no butter, but plenty of taste and texture. The flavor is a mild sweetness that pairs great with maple syrup, fresh fruit, or a touch of Trader Joe’s coco almond butter (I am obsessed with this stuff) and the texture is like a pancake corncake hybrid.

I like to double or triple the recipe if I have a little more time because these do freeze and reheat really well, so you can make a big batch on Sunday and have leftovers for breakfast during the week. To reheat you just use the defrost setting on your toaster followed by the regular setting.

The good sister and aunt that I made these for my sister and nephews last Christmas when staying at their house, and I am happy to report these were kid friendly. I love making these because they taste like a treat on top of being a nutrition powerhouse. Feel free to make them guilt free for yourself and your loved ones!

Servings: 4 servings, this recipe can easily be doubled or tripled etc.

I am a big fan of both avocado and mozzarella. I will often pair them with a fried Avocado mozzarella chicken with parmesan asparagus and mushroomsegg for breakfast or lunch, so why not pair them with chicken for dinner? The sides on this dish are simple but delicious, and the clean up isn’t too bad either. After I cooked this I thought, hmm some rice pilaf would have been nice. So feel free to add “put rice to boil” as step two if you would like.

Homemade granola with yogurt and strawberriesWhy make your own granola when there are seemingly endless options in any grocery store? There are a few benefits, the top one for me is so I know exactly what is in my granola, it’s easier to adjust for specific needs or tastes this way. Second, it is way cheaper. Third, its easy! It is so easy to make you could have the kids “help” you out. You could even impress your company by having this in the oven when they arrive. You could serve this with yogurt or even mix it with other nuts and dried fruit to serve it as a trail mix. Toss with a bit of dark chocolate to make it a dessert, yum!
